Recipes for the Hardy

I found some recipes I used allot when I was a Chef at a restaurant, hope You enjoy them.


    CRAB QUICHE

   2 eggs
  1/2 cup mayonnaise
  2 tablespoons all-purpose flour
  1/2 cup milk
  2 (6-oz.) cans crab meat, drained
  1/3 cup chopped green onions
  1 tablespoon minced fresh parsley
  2 cups (8 oz.) shredded Swiss cheese
  (9-inch) unbaked pie shell


  1.  Heat oven to 350 F. Spray 9-inch pie plate with nonstick cooking spray, like Pam.
  
  2.  In medium bowl, beat eggs at medium speed until frothy. Stir in mayonnaise, flour, 
       and milk; mix well. Stir in crab meat, green onions, parley and cheese; mix well.

  3.  Place pie shell in plate. Spoon mixture into pie shell. Bake 1 hour or until set.

  6 to 8 servings
